    Style: Pilsner - German

    ABV: 5    IBU: 31

    This frothy delight is clean, crisp and dry with a refreshing effervescence. Spuma is a pilsner made from all-German malts and noble hops which lend a pleasant bitterness and mildly floral and lemon aroma. Simplicity at its best.

    Lino is a classic West Coast IPA that showcases a medley of candied citrus, pine and resin hop character. The bone-dry finish, rich malt character and integrated bitterness lend to it's balanced drinkability.

    Style: Pale Ale - New England / Hazy

    ABV: 5.5    IBU: 29

    Juicy, hazy, thirst quenching and smooth. Masino delivers what you'd expect from a hazy New England IPA, but with a more moderate alcohol content, allowing for greater sessionability. Citra and Mosaic hops bring the juice on this one.

    Style: Pale Ale - American

    ABV: 5.5    IBU: 57

    A bitter pale ale hearkening back to the earlier days of American craft brewing. Pine and citrus hop notes dominate the aroma with a solid malt backbone consisting of an all-English base to keep the hops in check. A clean, dry finish rounds out this classic, highly drinkable pale ale. Named after Nonna Pippa. Italian nickname (or short name) for Giuseppina.

    Style: Bitter - Extra Special / Strong (ESB)

    ABV: 4.9    IBU: 35

    Malt-forward on the nose with notes of caramel and biscuit shining through, Zina is a classic and sessionable English Bitter. Although the malt character is predominant, we made sure to balance things out with an assertive hop bitterness. The all-English hop bill of Challenger & East Kent Golding lend an mildly herbacious and black tea-like character.

    Succo is our series of hazy experiments where we'll try new hop combinations, play with new yeast and mess with the grain bill too. The result, however, will always be hazy, juicy and full of big hop aroma and flavour. This batch uses Galaxy, Mosaic & Mosaic Spectrum hops for a tropical and citrus fruit aroma and flavour.

    Mezza Notte is a velvety smooth, satisfying espresso milk stout. This beer has a rich, creamy texture thanks to the added lactose, whose mild sweetness is balanced by a robust espresso aroma and roast malt finish. The beer is both energizing and comforting, just like a midnight espresso after a great meal.

    Roasty, nutty and comforting, Bruna is a traditional Northern English Brown Ale perfect for cold weather and warm exchanges.     Notes of amaretto, dried dark fruits, coffee and cocoa lead to an unctuous, full bodied, inky black ale that finishes with only a touch of chocolate sweetness. 'FORZA!' is our once-a-year Imperial Stout made from premium English base malts, German roast and chocolate malts along with a delicate charge of English hops to balance things out.

    Crisp, with a full-bodied malt presence, Marzo is our ode to Oktoberfestbier. With notes of dark rye bread, sourdough pretzel, autumn leaves and caramel, this beer will invigorate like a sunny Autumn afternoon. Brewed with the best German malts and hops we could find, this beer drinks easy, despite it's 5.9% strength and with a dry yet malty finish you'll hardly notice that your glass has become empty.

    Style: IPA - Black / Cascadian Dark Ale

    ABV: 7.5    IBU: 66

    Fermio is a bold and intense Black IPA. A rich malt character with a roasty, chocolate-covered coffee bean flavour is complimented by bright citrus fruit hop aromatics and a bitter finish. This beer was first brewed back at the original Bar Volo on Yonge Street in celebration of House Ales' 100th brew.

    Brewed as an ode to the great Bierhalles of Düsseldorf, Antica is a crisply bitter yet malty amber ale. Notes of orange pekoe tea, dried fruits, a nutty maltiness and a peppery hop character combine to bring an intriguing yet overall quenching experience.

    Style: Pale Ale - Other

    Inspired by one of the greatest beers of all time, Maximus utilizes ample amounts of Noble Hops during the boil, whirlpool and dry hop phases of the brewing process. A simple grain bill of Pilsner and Wheat malts give this beer a light and approachable base to display the pleasantly aromatic, slightly fruity and floral hop character that the German Noble hops display so beautifully. Overall, an elegant and nuanced refresher.

  • Cornuto

    Style: Bock - Single / Traditional

    ABV: 6.8    IBU: 24

    Cornuto is crisp. Cornuto is malty. Cornuto will keep you coming back for more. Volo and True History have a true history together and for this collaboration we decided to embody that as best we could. We brewed a Dunkles Bock (or is it an English Bock?) using an all-English grain and hop bill, pitched a traditional German lager yeast and then gave it a 3 month cold rest. The result is a beautifully rich, malt-forward lager beer that drinks smooth, crisp and refreshing despite its 6.8% strength.

    Style: IPA - American

    First brewed at the original Bar Volo on Yonge Street, Westside proudly displays all the features of what defined IPA back in the day: loads of hoppy citrus fruit character layered over a rich caramel malt backbone, balanced out by a resinous and pine-forward bitter finish. This beer is Old School and proud of it!

    Isola is an Italian Pilsner that is elegant and floral with a soft, fluffy texture. Brewed with premium German malts and dry hopped with traditional noble hops, this Pils is endlessly drinkable.
